Snackin but not Lackin (DP#131)

If I had the snack I was craving right now, it would be haystacks. Technically this is more of a dessert, but you can have them in snack bites, so I am counting it!

Just in case there are people that have no idea what I am talking about, haystacks are made of melted butterscotch, chow mien noodles, and chopped and roasted peanuts. Per my husband not really getting along with nuts, I replace those with marshmallows for that soft texture to go with the crunchiness of the noodles. There are some recipes that add peanut butter into the mix as well, but this is not necessary. All you really do is mix everything up in a large bowl and take small handfuls of the mixture and set them out on a baking sheet to harden up. Once they are ready to eat, they truly do resemble little, teeny tiny haystacks 🙂

Haystacks Recipe

These are great any time of the year but particularly around Fall and are SO simple and quick to make. Not to mention, they are quite customizable. I have seen people put M&Ms in them at Halloween, candied eggs for Easter, and peppermint chocolate for Christmas. I have also seen straight up chocolate ones so you can truly add whatever extra you wanted in these things.

  1. The title – ‘Snackin, but not lackin’ made me laugh. They look so scrumptious. I was unfamiliar with what ‘haystacks’ were. Thanks for the lowdown Ash!

    1. I was trying to be more out there with the title today, so I am glad you liked it. They are so good! My family has been making these for years.

      1. Great ‘finger-lickin’ title Haha. I’ve got to make these one day. I haven’t got an oven though.

      2. Oh, you do not need a oven for these. As long as you have a microwave or something to melt the butterscotch, you just mix all of the ingredients together, then separate into the haystacks, then put them in the fridge to harden. No baking.

      4. It is better chilled yes, since the butterscotch likes to melt in your hands like chocolate as you are eating them. It can be messy since it is crumbly. I hope you and your kids like them!
